**Eulang Mooncake Double Yellow with Lotus-paste Cake and Ham Wuren Pastry**

Eulang Mooncake is a popular brand of mooncakes in China. This particular mooncake is filled with lotus-paste and ham, and is wrapped in a wuren pastry. It is a delicious and traditional mooncake that is perfect for the Mid-Autumn Festival.

**Ingredients:**

* 1 cup of lotus seeds
* 1 cup of water
* 1/2 cup of sugar
* 1/4 cup of honey
* 1/4 cup of cornstarch
* 1/4 cup of water
* 1/4 cup of vegetable oil
* 1/4 cup of soy sauce
* 1/4 cup of rice wine
* 1/4 cup of Chinese five-spice powder
* 1/4 cup of sesame seeds
* 1/4 cup of chopped ham
* 1/4 cup of chopped scallions
* 1/4 cup of chopped cilantro
* 1 package of wuren pastry

**Instructions:**

1. Soak the lotus seeds in water overnight.
2. Drain the lotus seeds and place them in a pot with 1 cup of water. Bring to a boil, then reduce heat and simmer for 30 minutes.
3. Drain the lotus seeds and place them in a food processor. Add the sugar, honey, cornstarch, and water. Pulse until smooth.
4. Heat the oil in a wok or skillet over medium heat. Add the lotus paste and fry for 5 minutes, or until golden brown.
5. Add the soy sauce, rice wine, Chinese five-spice powder, sesame seeds, ham, scallions, and cilantro to the lotus paste. Stir to combine.
6. Preheat the oven to 350 degrees Fahrenheit.
7. Cut the wuren pastry into circles. Place 1 tablespoon of the lotus paste filling in the center of each circle. Fold the pastry over and seal the edges.
8. Place the mooncakes on a baking sheet and bake for 15 minutes, or until golden brown.
9. Let the mooncakes cool completely before enjoying.
